100G Basil semi-dried tomatoes (drained) reserve the marinade
1 cup grated tasty cheese
1 cup grated parmesan cheese
1/2 cup mayonnaise
1 loaf white bread
50g melted butter
1 In a food processor process the semi-dried tomatoes until roughly chopped, remove and place in a medium sized bowl. (hand blender can be used).
2Add grated cheese, mayonnaise and mix well.
3 Cut the crusts off the bread, flatten bread by rolling over the top with a rolling pin.
4 Top each piece of bread with spoonfuls of mixture, spread evenly over the bread. Roll the bread up encasing the mixture.
5 Lightly brush the outside of the scroll with butter, secure with a toothpick and place on a baking tray.
6 Bake in a preheated oven at 180c. Bake for 10 mins or until lightly golden.
Serve hot.
